Antoine Simoneau cultivates a 55 hectare vineyard on the hills above the River Cher at Domaine de la Rablais. The property has been in his family since 1790, just after the revolution, before which it belonged to the Seigneury of Chennonceaux. The Sauvignon vineyard accounts for about 25% of the domaine and sits on a mixture of miocene sand and clay with flints called "Clos Guillon". In the vineyard a green harvest and canopy management are used to ensure best quality and ripeness. The Sauvignon grapes are harvested at dawn or dusk when it's coolest in order to best preserve their aromas and freshness.
